You have recognized the problem. There’s no need to re-bag generally as long as you have 75 to 80% service contact to start with. If you are going to re-bag, you need to prepare a sterile surface, run tapwater over the entire sub primal piece of beef, rest it on the surface for about five minutes to allow the surface proteins to rehydrate. Then re-bag.
