It sounds like you are plan to proceed and more power to you, but rather than just a piece of plastic cut from say a bag may I suggest you use a piece of far stronger and tougher FoodSaver material to cushion the bone? In addition be careful that you don’t lay the sealed primal so as the bone points become wear points since as the meat ages it adheres to the Drybag while it shrinks and puts pressure on the Drybag. Apparently you have plans on how you intend to saw that bone when slicing or are you just planning to cut the bone away in tact?
