You’ll be just fine. My only suggestion is to quit handling it! By messing with it you risk puncturing the bag and breaking the new bond between bag and meat. The blood/enzymes will continue to dry. The best thing in aging is to leave it alone! As for fat side up or down I normally prefer the fat cap on the bottom, but I know of no reason not to put it on top – especially if that’s the way you start out.
