Trouble with bone in is you run the risk of easily tearing the thin UMAi Dry® bag material. While there are steps to take to possibly prevent that then a bone in also means that the meat will not dry age as uniformally because of that bone side.
As for sources – many people purchase their sub-primals from warehouse stores such as COSTCO and Sams. Also if you ask a butcher shop to sell you a sub-primal like they buy which is still in a cryovac bag that is fine. Avoid buying meat from a display case for dry aging!
