Granted 4 pounds isn’t much until you put it into perspective – how about a 4 pound chunk of boneless prime rib? It wouldn’t take much room in an otherwise cramped refrigerator. OTOH the dinner size would make good tests for an individual who wants to test aging for various lengths of time for their personal taste – that way by dividing up a full sub-primal in to say 4 dinner bags you could save some time and money. It’s just a thought…
