Those white strips are what you are supposed to use and that is why they are included! The UMAi Dry® bag is made of a unique material which breathes – letting the moisture escape as the meat dry ages. That is totally opposite of the “standard vacuum bag” which is meant to draw down a nearly perfect vacuum and then stay that way.
It is possible to seal a UMAi Dry® bag without the white strips – but it takes more effort. OTOH some people don’t even use a vacuum sealer at all! Just extract the air as best you can and then close the bag using a bread twisty.
