UMAi Dry® is a membrane, not a vacuum bag. You don’t need a perfect vacuum, and actually you can’t get a perfect vacuum. The membrane will immediately begin to relax as it takes up the moisture from the surface of the meat
Also, once aging progresses, the meat will dry and shrink away from the membrane. Not to worry–UMAi Dry® is still providing the essential protective environment.
