Nice report – thank you! BTW from reading elsewhere I know you seared first and then cooked after cooling down to a lower temp. One advantage with your ceramic cooker is it retains heat extremely well so trying to cool it right back down is a problem. I’ve found the reverse sear works so much better and practically lets you dial into an internal temperature! Hot tubbing also works well.
