Hi all
First post here. I have two prime rib roasts aging, both approaching 30 days so far. First roast was 6 lbs 9 oz, cap removed, second was 7 lbs, 11 oz, decent fat cap still on. I weighed them the other night, and the smaller roast had lost 1lb 6 oz, while the larger roast only lost 11 oz.
Any ideas why the big difference?
Thanks

I’d say that your fat cap is a moisture barrier, so you didn’t lose moisture through that part of your roast.
