We have salted both. Usually one hour of salt per inch of steak thickness would do, but you might shorten the time for dry aged steak since Ron has had some bad results. We have had no problem so far with 35 day aging, but the next batch is going for 45 days. The idea would be to experiment. After the new batch comes out early next month, I will post what we find works for us.
