I went to Sams on Monday (Oct. 29) and bought a 16 lb. rib eye and I asked the butcher when it was vacuum sealed and he said 10-11-12. That means it has already been wet aged for 18 days when I bought it. My bags will be in on Nov.2 so by the time I get it into the drybag it will have been wet aged for 22 days. I’ll let you know how it comes out.
