Doc, Glad your first attempt met your expectations! As for 60 days – like I was trying to say in my earlier post – try the 60 – it’s your money! Some people might feel that is too long since the loin is typically thin, but to each his own. I do know a person who went 100 days, but his assessment that was just too much and practically resulted in a big slab of jerky!
