Edwin, Welcome aboard our forum – always glad when someone new joins in. To answer your question no you should not have washed the meat as there is more chance of introducing bacteria that way. Just like the instructions say…
The critical factor for optimal dry aging results is the excellent bond that will form between the proteins coating the surface of the beef and the DrybagSteak material.
BTW potato feed beef is a new one to me, is that a common delicacy in your area? Ron
