Chris, Welcome to the forum and happy to hear you dropped the hammer and joined us!
As for knowing whether or not you got a good vacuum seal that should be evident very quickly – like even within an hour. As for getting a good bond that will take up to a week to become noticeable. I hope you read the instructions and left the wet proteins on the meat. They encourage the bonding process as the moisture is wicked out through the Drybag.
