The beef seems fine looking from the outside. The smell is also ok. It has been freezing here in Denmark for months. My refrigiator is placed in an insulted but not heated outhouse and is not opened often. I suspect the low temperature causes the compressor to not run often and airflow is thus limited. It is also very humid. Maybe this can cause mold to develop…
