Curt, Welcome aboard. Trust me…the great steakhouses which serve expensive dry aged steaks are serving prime, not choice. Yes, it makes a big difference from where you start! Even then it depends on where you purchased your beef. In other words what grocery stores pass off as choice – and especially when they run sales are questionable. I have have shaken my head at some of the beef national chains pass off to the consumer! My advice is to find a good butcher shop with trustworthy staff and a reputation to keep clean. Ron
