Ben, other than cutting and freezing in Food Saver bags there aren’t any other ways that I personally would risk. Yes I have heard of a person or two who have left them in a Drybag and then whack out a steak or two and try to seal back up, but personally I would not do it. I would be afraid that the cut end would have been exposed to bacteria somehow like from my cutting board or knife or merely touching it thus creating a problem with otherwise a finished, dry aged primal.
