Welcome to our forum, George! I say our forum since you are now part of it! As for the difference between the Food Saver bags and the DrybagSteak just a few simple words explain it. The Drybag breathes and the FS does not. The Drybag is made of a thinner material which bonds with the proteins on the surface of the beef and then allows the moisture to permeate out while blocking oxygen and off-flavors from coming back in.
Yes you need to draw a vacuum to get the Drybag to first lie flat against the meat so it can adhere in time. Air pockets should be avoided and there are tricks to doing it that are covered in many other threads here.
