However in answer to your question, the recommended temp is 34-38 degrees. Ron has a great intro contained within the thread “-Just-getting-started-need-some-tips-from-you-guys” and ” Help-while-dry-aging-temp-dropped-and froze”. Might I suggest that you thoroughly review the “How to” section and the various threads before you get started. I’ve found them to be valuable and will save the heartache of ruining bags and seals – these bags are relatively expensive. Again welcome to the Forum.
