That really is up to personal tastes and the doneness you prefer. I never have steaks 1″ or under as they tend to cook too fast and get overdone. 2″ is more of a luxury and impressive size and great for cooking to medium rare and even medium. 1.5″ is a nice in between thickness and what I typically cut mine to for my wife and I to enjoy. That size is plenty, but not overwhelming. Ron
