Dave – welcome aboard…Doc, not sure why you didn’t think I was here…
Anyway, Dave, I personally would not recommend buying , then cutting and aging that way that you asked. The trimming loss would be silly and you would not really benefit from the aging process IMHO.
Not sure what you have against freezing aged meat, but maybe I/we can address this concern later. Once aged and then sealed in Food SaverBags to prevent freezer burn you can keep frozen steaks for months – to then be thawed and enjoyed on short notice…anyway…glad you stopped by!
