Is this time frame normal? I am used to the Hunters Salami’s drying slightly faster although in a different environment. Also, This is the first time I have had a chub lose 30% of its weight and still be soft in the center. Thoughts on that?
I have had chubs be “not as dry” as I would like them to be so let them dry a little longer but not soft as these were….
