Paul, I’m just wondering out loud here…when you say your temp ranges from 1 to 4 C (33.8 F to 39.2F) that sounds ok, unless it stays closer to 1 C all the time. Also with such little moisture loss I wonder about your “small refrigerator”…is it one of those small dormitory size ones? While those will get cold they typically lack air circulation which whisks off the evaporating moisture from the meat. Ron
