Welcome to the forum. Many people have a similar question. The recommendations for special humidity controlled chambers relates to natural, collagen and fibrous casing use. The UMAi Dry sausage casing has very different characteristics than the previously mentioned types of casing, so in our experience one can use ordinary household refrigerator to successfully dry the dry sausage products stuffed into UMAi Dry.
