Hello Clint,
We think you can definitely use other cultures like the Bactoferm F-RM-52, it ferments at slightly higher temps (72-90F) than T-SPX The 75F is towards the bottom of that range.
You probably already know that you need to use powdered dextrose if you use this culture as it does not ferment with sugar.
Curious how it turns out. We think you will like the results.
