It takes around 2 hrs to bring the pizza oven up to temp we can use coal but only coal from Pa the coal here in Ohio is a soft hi sulphur coal ans is not suitable for use in a pizza oven it puts off a bad sulphur smell so we use a much harder Pa coal we get that coal ne’er my sister in law’s home outside of Harrisburg Pa. Hickory wood works best it imparts a nice smokey flavor , now we about to do some dry aged ribeye steaks we ordered the bags and today we are butchering 4black angus beef cows we will post the results when we are finished dry aging and we will post pictures.
