Curt, If it was me I’d wait until Tuesday…every day aging makes it that much better. Transportation should be no issue at this point as long as you are not real rough in handling it. The only possible problem I can foresee if the folks who will be sharing your feast with has never seen or understand dry aging they may get concerned when they first see it. BTW Happy Holidays! Ron
