I bought the starter kit 2 8″x18″ and 4 10″x11″ , I already use both 8″x18″ for the capicola, that fits perfect !
But with the other bags, 10″x11″ seems to be a problem, I think they are small to make another capicola, or a bresaola, that are the cuts i’m interested.
When I do the capicola, the meat fit perfect in the bag, so that the reason I think the other bags are small, and also the bresaola looks like a bigger cut of meat. I think the only way is trim the muscle meat, and make it smaller.
So, 8″x18″ are the bags to go.
