Hey, so I’ll just throw in my limited knowledge here. I’ve made several dry cured pork loins, 4lbs weight before cured, and after the are done I throw one in a zip lock in the fridge and the rest get vacuum sealed in a real vacuum seal bag and thrown in the freezer…. They will probably last 70-80 years in that freezer , because when I thaw one out its exactly the same as it was when I finished the cure.
Now I can’t speak for how your capicola but I’d figure it would stay ok in the freezer, I’ve never made one yet so I dunno. Enjoy your dry cure…. But be careful when you say you can’t eat it all at once, my is gone faster than I ever plan…. It’s addicting!
