Thanks Dave. As for a preference I understand and always say to each his own. In my case I tasted my first dry aged New York strip steak some 48 years ago at a fine, family owned local steakhouse and was hooked! That establishment has been my benchmark for my aging process successes. It was September, 2009 when I bought my first UMAi bags (then called DryBagSteak). Soon thereafter our visits to that steakhouse began to wane! What for years was at least 6 visits per year for an evening costing the two of us $110 per visit quickly dropped to a couple times a year simply due to celebrating our birthdays there out of tradition. Now the last time we ate there was three years ago! Thanks to UMAi we can enjoy great aged steaks at home at a fraction of the costs. Ron
