One little comment on your soppressata. The color looks good, but I would not hang them for fermentation in what looks like a space with a lot of air circulation. What happens is the outer surface can dry out before it has a chance to ferment and create collapsing or case hardening. Fermentation even in UMAi Dry is best done in spaces with very little air circulation. One space that is usually pretty good for fermentation is an oven, it has little air circulation. Just my 2 cents worth.
