Well played, Rocky! Just so happens tomorrow is day 35 for a choice New York loin I have been aging. 35 is the longest I have ever gone for a loin as I am of the belief since it basically is a thinner chunk-o-cow that it didn’t benefit by more time, BUT I have now changed my mind and will shoot for 45. I have aged thicker, meatier cuts such as rib eyes for 60 days, but I think 45 will be an interesting attempt for this loin of mine. Ron
