I like to know that as well. From my salami making experience, I think it is possible,
if you have a good recipe and no doubt there are some on the Net.
A UMAi bag could even be an improvement on the natural casings.
I will surf the Net as well for a do-able recipe. Winter is coming up here and that means “salami and charcuteri making”
