Hello, the butt is what you want it is the upper portion of the front shoulder there is a portion of the butt tha is the actual coppa muscel . I get a two pack from costco I get two Coppa’s and use he rest for salumi. The lower portion is called the picnic sholder and usually has a bone and a joint in it you don’t want to use that there is no coppa muscel . Watch the video on the web site it shows you where the coppa is and how to cut it. Hope this helps
