Just did another! 58-day rib eye (from Costco). I was planning to do it only 49 days but got extremely busy at work and lost track of it….regardless it was very good.
After dry aging, in the previous sub primals, I used to carve the hard outer jerky off first then cut into steaks. This time, I just cut into steaks right away and carved off the hard outer layer for each steak one at a time.
I found that method way faster and I also was able to better minimize how much good meat got carved off as well.
