Yes you can swap, but the point is the charcuterie bags are small and you really can’t get a very large piece of meat in one to dry age. Then even if you did dry age such a small piece by the time you trim it the results will be small. My advice is to pop for larger bags and keep your small speciality bags for charcuterie. Ron
