I have just ordered from UMAI the Instacure #2. Even though they are awesome about shipping, I did not get it in time before the Saturday. I was thinking about making a Pancetta this weekend as my first experience. The recipe calls for Instacure#2.
Can I use the Morton Tender Quick instead? and if YES, what is the exact amount I should use?

Thanks Everyone 😉
Have you made this yet?
Dont use cure #2 It will be so hard you wont eat it. Use cure #1 and make a dry rub. How much does the meat weigh?
If your going to use the MTQ use it at 1.5 tsp per pound of meat. So 7.5 tsp for 5 lbs of meat
