The meat was a medium grind. I use a Kitchen Aid mixer with the dough hook and the meat can get an emulsified look at times. But as per the posting we had sever bad weather which kept my smoker down. I rarely rarely do the hot water cooking thus this SS looks like a Mortadela finish.
