Hi Mike,
I always weigh when I vacuum the meat before placing it in the refrigerator. Most of the times I also put some elastic netting around it.
I take the total weight and let it dry until it reaches the planned weight.
When you put the meat in the netting, make sure you roll up the excess of the UMAi bag very neatly and NOT fold it over the existing plastic. It certainly won’t dry evenly if you fold it.
