Alex, You will be fine sealing frozen, but one word of caution…in the frozen state there is a possibility of a sharp or square edge on the meat, so during the sealing and then on into the refrigerator you will want to be careful in the handling and placement that the meat doesn’t puncture the bag against the wire shelf. Obviously once it has thawed it will be safe to handle, but I for one am in the school of thought that never moves the meat during the ensuing aging period. Good luck! Ron
