So there isn’t all that much to be gained aging a tenderloin huh? This is my second go around with the aging experiment so I’m definitely still learning. The first 38 day bone in rib roast came out great. I bought the 16×28’s with the original intent of doing more roasts and made an audible at the meat counter to a tenderloin. Glad I asked though- now to steak it out and go get another piece of meat.
