Nick, yes a 5 pounder is worth the effort. Most times the strip loin sub primals I buy are more like 10 to 12 pounds so it sounds like you purchased one end or the other…not trying to sound like a smarty*ss, but you either bought the thicker larger end or the smaller thinner end. Depending on which ever I would knock off 5 to 7 days of my aging period if it is the small end. Good luck! Ron
