Thats a great question. Drying temp of 50F is normal drying temp for dry salami and dry cured meats (of course not for dry aging steak !). We have never tried drying under these conditions in UMAi Dry, but have had several reports from other users that it was successful.
I assume you are asking about using UMAi Dry for drying salami in your curing chamber, if so I would say it should work just fine.
