Personally I have several types of steaks I dry aged and then packaged and froze in my freezer. Obviously it takes time to build up an inventory of them unless you dry age several sub-primals at a time. In a frozen state they will last a long time – as long as you use Food Saver bags and there are no seal issues creating freezer burn.
