I’ve gone 60 days for ribeyes a couple times and the same with sirloin. I can’t say that I thought they were much better than my usual preference of 45 days. OTOH go for it and let us know!
BTW I know one guy who went 100 days more or less for bragging rights and he said it wan’t noticeably different and didn’t feel the extra trimming loss was worth the time involved. Ron
