Thank you for your response. They have been fermenting just about two days now. I have them hanging in a large plastic storage box. I have the temperature controlled to be at 70 deg. The humidity is between 75 and 80%. It looks like the color is just starting to change. I plan to check the ph tomorrow to see if it dropped. If all looks good, into the curing fridge and wait.
