Excellent question. The amount of Bactoferm recommended by the manufacturer is about ⅛ (0.28g) teaspoon per 5 lb, however adding more is not harmful and may ensure a more thorough distribution of culture. We started recommending a ¼ teaspoon because it is easier to measure and seems to work for all of our tests. If you rifle through recipes available like Ruhlman, etc. the amounts of culture are all over the place, some even recommending adding half of an entire packet for a 10 lb batch.
The entire 25g packet is made for a 200 kg (440 lb) batch.
