I can’t speak for him as I have not seen the video. I happen to be in the camp that only trims off the hardest – outermost layer of bark and even very thin at that. What I have found is that the dark meat underneath is very tasty and sears beautifully. Maybe it is an acquired taste, but I like to challenge people to at least try it sometime and don’t be so trim happy! If you don’t like it you can always trim it off after cooking. What do you have to lose? Ron
