I know how to cook steak in many different doneness, in many different methods. I know what dry aged steak is as I’ve been buying it for a long time and went this route to save money.
First time dry aging at home. I’ve started moved my meat to it’s own fridge and I’ve started to age a subprimal without the bags.
500 dollars in meat down the trash, possibly another 200.
