One more question. I am dry aging 21 pound bone in prime ribs in dry bags right now. I wanted to remove them from the Umai bags and clean them up before xmas. What is the suggested time I can clean them up and wrap them in saran wrap and butchers paper, put them back in the refrigerator so I don’t have to freeze them for xmas dinner?
